Protein Bars

Carob Crunch Torte

2 c. almonds, dry
1 tsp. sea salt
2 vanilla beans scraped (I used vanilla powder)
1 1/2 c. pitted dates
3/4 c. carob powder (I used cacoa powder)
1/4 c. buckwheat crispies (soaked, rinsed, and then dehydrated buckwheat groats)

chop almonds in food processor until small pieces, add dates, vanilla, sea salt, carob powder, and buckwheat crispies and process until it clumps together.  If need be add another date or two or a slash of water for stickiness.
Line brownie pan in plastic wrap.  Add protein mixture and press down into the pan until it is smooth and resembles one large bar.  Refrigerate 2 hours.  Pull bar out of pan by lifting plastic wrap out.  Cut into desired sizes.  Can individually wrap and freeze.

Lemon Coconut Bars

1 c. almonds, chopped
1 1/2 c. pitted dates
1 vanilla bean (I used vanilla powder)
1 tsp sea salt
zest of lemon (I used lemon peel by spice island)
juice of one lemon
1 c. dried coconut

chop almonds in food processor until small pieces, add dates vanilla, sea salt, lemon zest and juice and coconut and process until it clumps together.  If need be add another date or two for stickiness.
Line brownie pan in plastic wrap.  Add protein mixture and press down into the pan until it is smooth and resembles one large bar.  Refrigerate 2 hours.  Pull bar out of pan by lifting plastic wrap out.  Cut into desired sizes.  Can individually wrap and freeze.

Almond & Cranberry Protein Snack Bars

1 1/2 c. dates
1 c. almonds
1/2 c. cranberries
1/2 c. coconut
1 tbsp vanilla

Grind up nuts in food processor until they are in small pieces.  Add the remainder of ingredients and process until ingreadients stick together. 

Line brownie pan in plastic wrap.  Add protein mixture and press down into the pan until it is smooth and resembles one large bar.  Refrigerate 2 hours.  Pull bar out of pan by lifting plastic wrap out.  Cut into desired sizes.  Can individually wrap and freeze.
