Pineapple Fried Rice
From the kitchen of Dick and Shelly Elsbree 1/13/10
3c. precooked cold jasmine rice
1/2 c. white onion
2 Tbsp. sunflower seeds
3 carrots diced
2 c. frozen peas (or as many as you like to taste)
1 c. finely sliced pineapple
3 green onions
Soysauce (to taste-mmmm...three splashes)
Saute onion, sunflower seeds and carrots until they start to soften. Add salt and pepper to taste while the onion/sunflower and carrots saute on medium high heat. Add rice, peas and pineapple and continue to cook until peas thaw. Add soysauce and green onions and continue to fry on medium high until rice starts to brown. Feeds three starving individuals!
