Sausages
Adapted from the Cookbook Vegan Brunch
1/ c pinto beans rinsed and drained
1 c veggie broth
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp tomatoe paste
2 tspb lemon zest
2 garlic cloves grated with mini microplane
1 1/4 c. vital wheat gluten
1/4 c. nutritional yeast
1 tsp ground ginger
1 tbsp paprika
1 tbsp dry rubbed sage (not powdered)
1 tsp oregano
Get steamer ready, including a full boil. Have ready four sheets of tin foil. In a large bowl, mash the beans until no whoe ones are left. Throw all the other ingredients together in teh order listed and mix with a fork. Di8vide dough into four even parts. Put one fourth in on a piece of foil and roll up making sure to twist the ends of foil tightly so that as the sausage cooks it cannot expand too much (your sausage will get spongy with too much moisture) - think tootsie roll. The rolls don't have to be perfect as they will take on a sausage shape as they cook. Complete the same with the other 3/4 of dough. Put in steamer and steam 40 minutes. Enjoy immediately or refrigerate until ready to use. Try them sliced and sauted with olive oil, put in tofu/egg scrambles, on pizza, part of sandwiches - the uses are endless!!!

Spicy Banana - Fo - Fana Date Shake
From the cookbook Raw Energy by Stephanie Tourles
1 1/2 - 2 c. almond milk
4 dates (soak 1 hr prior if too hard)
2 medium frozen bananas
1/4 tsp. nutmeg
Blend all ingredients until smooth adding more milk until desired consistency is reached. I was naughty and added a splash of coffee to mine which made it delicious!!!
Maple - Pecan French Toast

1/4 c. pecans
1/4 c. water
3 Tbsp maple syrup
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp ground ginger
1/8 tsp sea salt
2-3 slices of bread
Grind up pecans in blender or food processor. Add water, syrup, vanill, cinnamon, ginger and sea salt and blend 1 minute. Make french toast like you normally would! Reminder: Don't be stingy with the PAM and don't flip until the sizzle is to a minimum or the toppings will scrape off. Enjoy! ME
